Being Italian I couldn’t avoid joining this group :p

Here is a very easy but very special and tasty traditional recipe from my homeland : Sardinia !!!

Spaghetti with Bottarga :

Pasta sauce for 6:
Prep Time: 10 minutes
Cook Time: 12 minutes
Ingredients:

  • 1 pound (400 g) spaghetti
  • 2 ounces (50 g) bottarga
  • 1/3 cup (80 ml) olive oil

Preparation:
Cook the pasta in salted water. While it’s cooking, grate the bottarga into a bowl, add the oil, and stir until you obtain a paste. Drain the pasta and turn it into a large skillet; stir in the sauce and cook over a brisk flame for a minute, stirring the pasta about energetically.

Serve, and enjoy ;-)

P.S. You may wonder, but what is bottarga??? Bottarga is a dried salted tuna roe. A great delicacy that many consider rather randy and that comes from Sardegna only !!!

P.S. Not to disappoint anyone, next time I’ll come back with a recipe of Marseilles, my second home :p

For Christina or anyone else who may be interested.

This is one of my favorite Indian curry recipes. I found it a while back in a great cook book called, Vegan Planet. I have yet to serve it to someone who didn’t rave about it.

2 Tablespoons of corn oil
1 small yellow onion, minced
1 small carrot, thinly sliced
1 small green or red bell pepper seeded and chopped
2 or 3 garlic cloves, minced
2 Tablespoons Indian curry powder or paste
One 14.5 ounce can diced tomatoes, undrained
1/2 Cup frozen green peas, thawed
1 1/2 cups cooked or one 15-ounce can chickpeas, drained and rinsed
One 14-ounce can unsweetened coconut milk
4 ounces soft silken tofu drained
Salt and freshly ground black pepper
1/2 cup chopped unsalted dry-roasted peanuts
Scallions (green onions)

1. Heat the corn oil in a large skillet over medium heat. Add the onion, carrot and bell pepper. Cover and cook until softened, about 5 minutes. Add the garlic and curry and stir to blend. Stir in the tomatoes and juice, simmer to blend the flavors, and reduce the liquid by one half, 5 to 7 minutes. Add the peas and chickpeas, reduce the heat to low, and keep warm.
2. In a food processor or blender, combine the coconut milk, tofu, and salt and pepper to taste. Process until smooth, then pour into the vegetable mixture and simmer gently.

Serve it over brown basmati rice and sprinkle with peanuts and scallions. Enjoy!!
